2014 Blanc de Blancs Extra Brut
Nova Scotia’s unique coastal-influenced terroir provides the necessary growing conditions for the production of distinctive, world class quality traditional method sparklings. The Blanc de Blancs Extra Brut is our top prestige cuvée offering from the 2014 vintage. This is a 100% Chardonnay, single-vineyard Méthode Classique sparkling from a specifically selected low-cropping block on our estate (Lightfoot Home Farm Vineyard in Wolfville, Nova Scotia). Primary fermentation was spontaneous with indigenous yeasts in just four very old/neutral French oak barrels. A partial malolactic fermentation and four years of lees aging, followed by an additional year of bottle aging post-disgorgement contributed to the creamy, elegant texture, balancing the vibrant acidity. Tasting Notes
Pale-gold with fine, lively bubbles. Layered and nuanced nose with notes of lemon curd, hazelnut, and light toasty lees. Precise and focused with salty citrus intensity and smoky, stony undertones. Lengthy, creamy finish with classic cool-climate acidity bringing all components into perfect harmony.
Pairing suggestions include shellfish, butter or cream sauces, fried dishes such as chicken or calamari, oysters and caviar.
