Nova Scotia’s coastal-influenced growing environment provides the ideal conditions for the production of traditional method sparkling wines of great distinction. Cool breezes and extended hang times create full-flavoured sparkling grapes that achieve phenolic ripeness, yet possess a relatively low sugar content and beautifully retained natural acidities. The resultant sparkling wines are characterized by a distinct brilliance and clarity of flavour.
The 2017 Lightfoot & Wolfville Brut is composed of 100% Chardonnay, hand-harvested between October 7th and 14th. Unusually hot and dry weather during the final ripening period resulted in the ideal balance between richness, aromatic intensity and freshness.
Primary fermentation of the base wine took place in stainless steel to preserve purity of the primary fruit character, while a full malolactic fermentation imparted texture and roundness, layered over a backbone that is firm and structured Bottled on August 9th 2018 for secondary fermentation in bottle, and aged 46 months on lees. Disgorgement took place on May 25th 2022 with a dosage of 8 g/L.

Tasting Notes
Pale gold with fine, lively bubbles in the glass. On the nose, notes of yellow citrus peel, crushed stones and brown butter are accented by hints of honeyed peach. On the palate, light lees flavours and a textured mousse bring a sense of richness to the backbone of freshness.
Pairing suggestions include gougéres, lobster on brioche with green apple slaw, root vegetable terrine, oysters with verjus and creamed mushrooms on toast.
