2020 Bubbly White
Nova Scotia’s cool climate and ocean influenced terroir provide the ideal conditions for expressive aromatic whites and lively sparkling wines. The Lightfoot & Wolfville Bubbly White celebrates the essence of both these signature styles as a fresh, fragrant, Germanic-inspired, aromatic sparkling.
Secondary fermentation took place via the Charmat Method; in a custom stainless steel pressure tank, providing a delicate, persistent effervescence. Given the desired style for this sparkling, lees contact was kept short to preserve freshness and purity of the primary fruit character.
The warm, idyllic conditions of the 2020 growing season and low disease pressure in the vineyard contributed clean, pure fruit flavours and unprecedented aromatic intensity.

Tasting Notes
Pale-gold in the glass with lively effervescence. On the nose, fragrant notes of white blossom and honeyed tree fruit - pear and peach - are accented by hints of lemongrass. The fresh fruit flavours carry over to the palate, with lush melon balanced by refreshing citrus.
Bubbly White serves well as an apéritif, alongside a casual picnic lunch or brunch spread and when paired with Thai-inspired dishes such as Pad Thai or curry, or with fresh cheeses and cured meats.
