2021 Terroir Series Riesling Icewine
Nova Scotia’s cool climate growing environment provides the ideal conditions for the production of complex icewines with tremendous balance and agreeability, due to their naturally elevated acidities. The 2021 Terroir Series Riesling Icewine is our inaugural icewine release from the Riesling grape; frozen naturally on the vine and hand-harvested from the Lightfoot Home Farm Vineyard on December 10th, when temperatures dipped below -8°C. Pressed in a traditional Marzola basket press to extract a luscious and ultra concentrated juice. Fermentation was long and cool in stainless steel.

Tasting Notes
Straw gold in the glass. On the nose, an intense bouquet with aromas of caramelized apple, honeysuckle, beeswax and baked apricot. The beauty of Nova Scotia icewine lies in its fine balance of acidity and sweetness. This wine exhibits piercing fresh acidity, luscious sweetness and incredible concentration of fruit flavours.
The ideal pairing for rich pâtés such as chicken liver mousse with fruit compote or apple pie with aged Cheddar.
Service Temperature: 10-12°C
Recommended Drinking: 2023-2033. Has the structure, sweetness and acidity, to suggest up to a decade in cellar.
