2020 Brut Rosé
From 75% Raven Hill Vineyard (Wolfville) Pinot Noir and 25% Oak Island Vineyard (Avonport) Pinot Meunier; grown on the shores of the Minas Basin, an inlet of the Bay of Fundy, where hilly slopes extend the frost free period and provide excellent exposure.
The relatively warm and dry 2020 growing season produced amplified ripe fruit flavours. The Pinot Noir portion (75%) macerated on skins for ~12 hours before pressing, while the Pinot Meunier component (25%) was whole cluster pressed with minimal skin contact time. A full malolactic conversion in the base wine (100% stainless steel fermented) contributes to the creamy texture and integration of acidity. Bottled April 21st 2021 for secondary fermentation in bottle. Aged 13 months on lees. Disgorged May 24th 2022 with a 2 g/L dosage.

Tasting Notes
Deep salmon hue in the glass. On the nose, ripe fruit and floral notes dominate, such as woodland strawberry, black plum, mandarin and rose petal. The fruit flavours carry through to the palate with a mid-palate creaminess indicative of a riper vintage and a full malolactic conversion.
Pairing suggestions include cured meats, seafood chowder, duck confit, seared scallops with parsnip purée and strawberries with cream.
