2016 Terroir Series Vidal Icewine
The Lightfoot & Wolfville Terroir Series is a collection of small-lot wines intended to showcase the Annapolis Valley's distinctive sense of place. The label imagery reflects this theme and helps tell the story of each wine. The pocketwatch symbolizes the importance of timing during icewine harvest, the birds and dessicated clusters represent the inherent struggles involved with hanging fruit on the vine so late into the season, and the eye looking through the keyhole represents the human element of biodynamic farming and terroir expression.

Our 2016 estate icewine harvest took place on December 10th when temperatures on the Lightfoot Home Farm dipped to -9C around dawn. A small-lot of naturally frozen grapes (35-47 Brix), certified organic (ProCert) and biodynamic (Demeter), were handpicked and transported to the winery for immediate pressing.
Basket-pressing the frozen grapes extracted a luscious, concentrated juice. Fermentation was long and cool in stainless steel. This wine was aged in stainless steel for a year before bottling and release.
Tasting Notes
Pale gold in the glass. On the nose, caramelized apple, fresh pineapple, and orange blossom. The palate is lush and sweet, balanced by a framework of crisp acidity.
Stands alone as a beautiful dessert wine or pairs excellently with blue cheese or apple pie. Serve in 1.5 ounce pours.
Service Temperature: 7 – 12°C
Recommended Drinking: 2018-2026. Has the structure, sweetness and acidity, to suggest up to a decade in cellar.
