2017 Small Lot Home Farm Chasselas
This is a sweet / dessert style wine from just two rows of Home Farm Chasselas - a fairly neutral white grape - widely planted in Switzerland and known for its excellent ability to convey terroir. All grapes were frozen whole-cluster and basket-pressed to extract a concentrated nectar. Fermentation was long and slow in stainless steel.

Tasting Notes
Deep golden hue in the glass. Notes of persimmon, orange blossom and lanolin. The palate is viscous and has a delightful sweetness, with flavours reminiscent of baked apple, yet well balanced by classic Nova Scotian acidity.
Pairing suggestions include molasses cake with apple chips or apple butter, nutty cheeses such as Comté, fruit tarts or foie gras.
