2018 Ancienne Chardonnay
At Lightfoot & Wolfville there is a constant connection to the generations before us and the many ahead. A sense that this is simply our turn, our watch. Ancienne, meaning old/ancient, is a collection of the wines that we feel best represent “our turn” – the ultimate expression of our two estate vineyards and the pinnacle of our winegrowing efforts.
The label, styled to look like a page torn from an old book, depicts an illustration of a red-tailed hawk, representing our commitment to working in harmony with nature and promoting biodiversity through our farming practices. The hawk is holding a mayflower, a symbol of Nova Scotia, in his beak and an old Acadian farming tool in his talons; a tribute to those who cared for this land before us.
Our Ancienne Chardonnay is a biodynamic certified (by Demeter), single-vineyard wine from the Lightfoot Home Farm Vineyard in Wolfville, Nova Scotia where excellent exposure, particularly fine soil drainage and incessant saltwater breezes combine with natural airflow to create conditions that are remarkably conducive to the growing of vibrant, distinctive and full-flavoured Chardonnay grapes.
Spontaneous fermentation took place in barrel using indigenous yeasts. A full malolactic fermentation, also indigenous, softened the mouthfeel and imparted a creamier texture. Aging of 18-months sur lie in French oak (20% new, 80% old/neutral) provided depth and further enhancement to texture.

Medium yellow-gold with a green tinge in the glass. Notes of lemon curd, yellow apple pith, toasted biscuit and roasted hazelnut. Any evidence of oak is well-integrated, with a degree of opulent richness overlaid by cool-climate freshness and minerality.
Pairing suggestions include lobster dipped in brown butter, Cornish game hen, scallops in beurre blanc, truffle butter pasta and aged hard cheeses such as cave-aged Gruyère.
