2019 Brut Rosé
The newest addition to our traditional method sparkling program, the Brut Rosé has quickly cemented its place in the Lightfoot & Wolfville portfolio following the inaugural release in the spring of 2020, which went on to rank on the Wine Align Guide to Canada’s Best Wines - Top 10 Sparklings list.
The 2019 is a single-vineyard bottling with all fruit sourced from our growing partners across the street at Raven Hill Vineyard in Wolfville, Nova Scotia. Its 100% Pinot Noir, grown organically. Two thirds of the fruit was destemmed into the press for an overnight skin soak while the remaining one third was pressed whole-cluster. A full malo-lactic conversion in the base wine and 11 months aging on the lees softened the beautiful natural cool-climate acidity, enhancing texture and mouthfeel.

In the glass, a pale salmon hue with fine, lively bubbles. On the nose, delicate wild strawberry and river mint leaf, layered with doughy biscuit notes. Lively acidity lifts the mid-palate, with a creamy mousse that provides balance and elegance.
Pairs well with trout tartare with crème fraîche and dill, strawberries and cream and salty cured meats.
