The pinnacle still wine expression of the Lightfoot Home Farm Vineyard, our Ancienne Chardonnay is grown in close proximity to the Minas Basin, where incessant saltwater breezes help craft wines of great distinction.\u003c\/p\u003e\n\u003cp class=\"p2\"\u003eCareful attention to maximize flavour potential begins early in the vineyard with selected cluster removal, leaf thinning and shoot positioning. Farming practices are certified organic (Ecocert Canada) and biodynamic (Demeter). All grapes are hand harvested and the first round of hand-sorting takes place in the vineyard at picking time, ensuring only the highest quality clusters are selected for this wine.\u003c\/p\u003e\n\u003cp class=\"p2\"\u003eFruit for the 2022 vintage was hand-harvested across three separate pick dates on the 13th, 21st and 23rd of October. In the cellar, this wine is vinified according to classic Burgundian winemaking techniques; pressed whole cluster and barrel fermented with wild yeasts and full malolactic conversion in mostly used \/ neutral French oak (\u0026lt;20% new).
