As part of our ongoing exploration of cold-hardy grape varieties capable of producing exceptional quality red wines in our growing environment, we first planted one acre of this distinctive variety in 2014, followed by a second acre in 2017.\u003c\/p\u003e\n\u003cp\u003eThis experimental Small Lot Rosé was crafted using the traditional saignée (\"bled\") method. Following a few hours of skin contact, a portion of the free-run juice was gently drawn off and fermented separately in stainless steel, creating a rosé with delicate colour, bright fruit expression and enhanced texture. The remaining fruit continued on to red wine production, concentrating both wines while showcasing the versatility of this unique variety.
