2016 Small-Lot Sparkling Chenin
A traditional method sparkling Chenin Blanc; a style inspired by the delightful sparkling wines of the Loire Valley. Made from the one and only acre of Nova Scotian Chenin Blanc, grown in our organic and biodynamic Oak Island Vineyard in Avonport, Nova Scotia; one of the Annapolis Valley's most privileged vineyard sites, sheltered by the moderating influence of the Minas Basin. Lees aging of 19-months provided texture and depth. Disgorged February of 2019.

Tasting Notes
Pale straw-gold with fine, energetic bubbles. Layered aromas of baked yellow apple tart, honey, clover hay and wax. Lively and bright with racy acidity beautifully harmonized by a textured, creamy mid-palate and persistent length. Vibrancy, elegance and delicacy.
This is a versatile food pairing wine that is ideal with shellfish or white meat dishes, cream or butter sauces.
