2016 Blanc de Noirs
Building on the highly acclaimed inaugural release of the Lightfoot & Wolfville Blanc de Noirs from the 2015 vintage, the 2016 offers an equally distinctive single vineyard bottling from our Avonport vineyard - the “Oak Island Vineyard’. A Traditional Method sparkling from 100% Pinot Meunier, hand harvested on the 30th of September, this wine is certified organic and biodynamic (Ecocert / Demeter).
Primary fermentation of the base wine took place in stainless steel. Extended lees aging just shy of five years (59 months) provided layers of depth and richness,
followed by an additional year of bottle aging post disgorgement in May of 2022.

Tasting Notes
Pale gold in the glass with a fine, lively effervescence. On the nose, a balanced bouquet of toast and smoky red berries. The fruit-led palate is layered with flavours of cherry, cranberry and red currant. The core is supported by vibrant acidity, making this an excellent food wine.
Pair with smoked salmon canapés, creamy cheeses or a croque madame on buttery brioche.
