2021 Brut
Nova Scotia’s coastal-influenced growing environment provides the ideal conditions for the production of traditional method sparkling wines of great distinction. Cool ocean breezes and extended hang times allow grapes to achieve phenolic ripeness while retaining naturally bright acidity and moderate sugar levels-hallmarks of balance, freshness, and longevity in sparkling wine.
The 2021 Lightfoot & Wolfville Brut is composed entirely of Chardonnay. All fruit was hand-harvested and whole cluster pressed. Primary fermentation took place in stainless steel to preserve aromatic purity and freshness, while full malolactic fermentation contributed subtle creaminess and texture to the palate. Secondary fermentation occurred in bottle, followed by 40 months of lees aging to build depth, complexity and finesse. Disgorged in November 2025.

Tasting Notes
Pale gold in the glass with a fine, persistent mousse, the 2021 Brut opens with aromas of Honeycrisp apple, preserved citrus, and crushed stone, layered with delicate white blossom and subtle notes of toasted hazelnut. The palate is defined by stony precision and saline freshness, balanced by understated richness and texture from extended lees aging. A taut, elegant mousse carries flavours of orchard fruit, citrus oil, and wet stone through a long, refined finish marked by cool climate acidity and finesse.
Ideal pairings include seafood crudo with citrus and sea salt, potato rösti with crème fraîche and caviar, or salt-baked halibut with fennel and preserved lemon.
