2017 Small Lot Trio Brut
This is a special, limited production sparkling wine that showcases Nova Scotia’s coastal-influenced growing environment and its suitability for the production of traditional method sparkling wines of great distinction.
A blend of 42% Chardonnay, 42% Pinot Meunier and 16% Pinot Noir, this wine is modelled after a classic trio Champagne blend. Each grape variety brings different characteristics to the final cuvée. Chardonnay adds finesse, elegance and crisp acidity. Pinot Meunier contributes fruitiness, especially red-fruit flavours, soft florality, roundness and approachability. Pinot Noir gives body, structure and depth.
All grapes were sourced from our organic and biodynamic estate vineyards. The Chardonnay from the Lightfoot Home Farm in Wolfville and the Pinot varieties from the Oak Island Vineyard in Avonport. Extended lees aging of 56 months provided layers of autolytic depth and ultra fine bubbles.

Tasting Notes
Pale yellow-gold in the glass with fine, persistent bubbles. On the nose, notes of sweet red apple skin and lemon brûlée are accented by savoury, sea brine undertones. Structured and balanced with persistent length.
Pairing suggestions include broiled white fish with beurre blanc and olive tapenade, boquerones, chicken piccata and gnocchi with brown butter and sage.
