2020 Brut
Nova Scotia’s coastal-influenced growing environment provides the ideal conditions for the production of traditional method sparkling wines of great distinction. Cool breezes and extended hang times create full-flavoured sparkling grapes that achieve phenolic ripeness, yet possess a relatively low sugar content and beautifully retained natural acidities.
The 2020 Lightfoot & Wolfville Brut is composed of 100% Annapolis Valley-grown Chardonnay. The idyllic, warm and sun-filled 2020 growing season contributed to its remarkable balance, with a slightly riper fruit expression layered over vibrant brilliance and clear, refined flavours.
All grapes were hand-harvested and whole cluster pressed. Primary fermentation of the base wine took place in stainless steel to preserve purity of the primary fruit character, while a full malolactic fermentation imparted a creamy texture and roundness on the mid-palate. Secondary fermentation took place in bottle, with 47- months spent aging on the lees for added depth and complexity. Disgorged in March of 2025.

Tasting Notes
Pale gold in the glass with fine, persistent bubbles. The nose opens with crisp apple, lemon zest, and flinty minerality, layered over subtle botanical notes reminiscent of fennel and marjoram. On the palate, there’s a lively interplay between saline vibrancy and savoury complexity, supported by a taut, precise mousse. A dry expression with cool climate acidity and a lingering finish that calls to mind citrus oil, wet stone, and delicate herbal nuance.
Ideal pairings include seafood crudo with citrus and salt, gruyère soufflé, potato rosti with crème fraîche and caviar or salt-baked halibut with fennel and preserved lemon.
