2021 Ancienne Chardonnay
Ancienne is a faithful, living record of our terroir - exceptional single-vineyard wines grown in some of the Annapolis Valley’s finest vineyard sites. The pinnacle still wine expression of the Lightfoot Home Farm Vineyard, the Ancienne Chardonnay is grown in close proximity to the Minas Basin, where incessant saltwater breezes help craft wines of great distinction.
Careful attention to maximize flavour potential begins early in the vineyard with selected cluster removal, leaf thinning and shoot positioning. Farming practices are certified organic (Ecocert Canada) and biodynamic (Demeter). All grapes are hand harvested and the first round of hand-sorting takes place in the vineyard at picking time, ensuring only the highest quality clusters are selected for this wine.
In the cellar, this wine is vinified according to classic Burgundian winemaking techniques; pressed whole cluster and barrel fermented with wild yeasts and full malolactic conversion in mostly used / neutral French oak. Aged 20 months sur lie in barrel (25% new, 37% 3rd fill, 38% 4th fill +).

Tasting Notes
Medium yellow-gold in the glass. On the nose, notes of McIntosh apple and lemon curd with hints of toasted hazelnut and chamomile. On the palate, the rich, concentrated fruit flavours are balanced by refreshing cool climate acidity and minerality.
Pairing suggestions include snow crab or fresh shucked lobster in garlic butter, risotto with white truffle, oysters Rockefeller, or porcini pasta.
