2019 Small Lot Sparkling Kékfrankos
The first of its kind, this unique small lot bottling is the result of the distinctively cool 2019 growing season, which opened up new possibilities for sparkling wine style exploration in Nova Scotia. This is a Traditional Method sparkling made up of 85% Oak Island Vineyard (Avonport) Kékfrankos and 15% Home Farm Vineyard (Wolfville) Chardonnay.
Pressed whole cluster to stainless steel for primary fermentation with a neutral Champagne yeast, followed by eight months aging in used French oak barriques prior to bottling for secondary fermentation. Disgorged on February 14th 2023 with a dosage of 14 g/L after nearly two and a half years (29 months) of lees aging.

Tasting Notes
Light gold with ultra pale copper hints in the glass with a delicate and persistent mousse. On the nose, prominent warming spice notes reminiscent of bergamot are complemented by fleshy red stone fruit and undertones of black tea. The red fruit carries over to the palate, balancing the distinctive mid-palate saline flavours.
Pairing suggestions include halibut crudo with shaved fennel salad, oysters and fried mushrooms on toast.
