2022 Farmhouse Cider
Long before we began making wine, the Lightfoot family was making cider. Following a tradition passed down through generations, cider was crafted and stored in the cellar of the old farmhouse or barn, then brought out to be shared during holidays, family gatherings, and with friends.
The term farmhouse speaks to this tradition—cider made on the farm from the fruit of nearby orchards, in small batches using timeworn techniques. It is a philosophy rooted in place, much like the way we approach and craft our wines.
We are proud to carry this legacy forward with the 2022 Farmhouse Cider. Local apple juice was sourced from Van Meekeren Farms and blended with fruit from heritage apple trees surrounding our vineyard properties. The blend includes classic, tannic varieties such as Jonagold, Golden Russet, McIntosh, Gravenstein, and Northern Spy.
Primary fermentation occurred with wild yeasts in stainless steel. Secondary fermentation took place in bottle using neutral Champagne yeast, creating a gentle, natural carbonation. Bottled in April 2023, this cider spent 35 months aging on its lees prior to release.
This bottling is non-disgorged, and as such, retains a natural yeast sediment, contributing both texture and complexity to the final cider.

Tasting Notes
In the glass, this cider presents with a deep golden hue with fine, lively bubbles. The nose is inviting and expressive with aromas of fresh pear and white blossom - jasmine - layered with subtle hint of baking spice and toast. The palate is dry and light-bodied, with a bright, refreshing character. Orchard notes carry through, leading to a crisp, savoury finish marked by a delicate sea salt minerality.
Food pairing suggestion includes Moules-frites, grilled sausages with saukerkraut, roast pork with apple or parsnip purée and butternut squash soup.
