2019 Brut
Nova Scotia’s coastal-influenced growing environment provides the ideal conditions for the production of traditional method sparkling wines of great distinction. Cool breezes and extended hang times create full-flavoured sparkling grapes that achieve phenolic ripeness, yet possess a relatively low sugar content and beautifully retained natural acidities.
The 2019 Lightfoot & Wolfville Brut is composed of 100% Nova Scotia Chardonnay. The cooler-than-average growing season in 2019 contributed to its remarkable freshness, vibrant brilliance and clear, refined flavours.
All grapes were hand-harvested and whole cluster pressed. Primary fermentation of the base wine took place in stainless steel to preserve purity of the primary fruit character, while a full malolactic fermentation imparted a creamy texture and roundness on the mid-palate. Bottled on May 7th 2020 for secondary fermentation in bottle and aged 46 months on lees. Disgorged March 13th of 2024.

Tasting Notes
Pale gold with fine, lively bubbles in the glass. On the nose, notes of lemon zest, oyster shell and crushed stones are accented by hints of buttered brioche. On the palate, toasty lees flavours and a textured mousse bring a sense of richness to the backbone of freshness.
Pairing suggestions include gougéres, lobster on brioche with green apple slaw, root vegetable terrine, oysters with verjus and creamed mushrooms on toast.
