2022 Brut Rosé
A coastal-influenced, traditional method sparkling rosé, the 2022 Brut Rosé captures the vibrancy, precision, and crystalline freshness that define Nova Scotia’s ultra–cool-climate region. Composed of 50% Pinot Noir and 50% Pinot Meunier —two traditional Champagne varieties — the fruit was gently whole-cluster pressed and co-fermented in stainless steel to preserve purity and seamless integration of the two varieties.
The base wine then underwent full malolactic fermentation, contributing to the rounded, creamy mid-palate that balances its bright maritime acidity. Bottled for secondary fermentation and matured 22-months on lees, the wine developed fine, persistent bubbles and subtle autolytic complexity.
The 2022 Brut Rosé offers an elegant, expressive profile that reflects both the coastal influence of our region and the classic structure of traditional method sparkling wine.

Tasting Notes
A pale onion-skin hue in the glass. The nose is delightful and expressive, offering delicate red berries and rhubarb galette layered with white pepper, subtle truffle, and savoury herbes de Provence. The palate echoes the aromatics—red berry fruit woven with gentle spice and earthy nuance—carried by a dry, balanced structure. A fine, creamy mousse adds textural elegance and a graceful, lingering finish.
Pairing suggestions include snow crab with herb butter, roasted poultry with cranberry compote, and charcuterie boards with soft cheeses and savoury pâtés.
