Bubbly Rosé is a fruit-driven sparkling wine crafted to showcase the vibrant character of Nova Scotian-grown aromatic grape varieties. Bright acidity, fragrant floral notes, and lively fruit expression reflects the region's cool-climate terroir, while our diverse vineyard plantings allow the winemaking team to create a sparkling wine that is both approachable and uniquely expressive.
Produced using Charmat Method, secondary fermentation takes place in tank to create a delicate and persistent mousse while preserving freshness, purity of fruit, and aromatic intensity. Lees contact is intentionally kept brief to maintain the wine's bright and vibrant profile.
A non-vintage blend of multiple harvests, Bubbly Rosé is crafted to deliver a consistent house style, dependable quality, and sustainable production from year to year, regardless of seasonal variation in growing conditions.

Tasting Notes
A pale peach hue shines from the glass. The nose is fragrant and expressive, with aromas of fresh strawberry, rhubarb pie, ruby grapefruit and lychee sorbet, complemented by delicate floral notes. Bright red fruit and citrus carry over to the palate, which is wonderful balanced and focused with fine, lively bubbles and vibrant acidity providing freshness, energy, and persistent length.
Bubbly Rosé is a versatile apéritif and equally at home alongside light lunches and warm weather gatherings. Suggested pairings include maki sushi, fresh chèvre and other lactic cheeses, cured meats, saffron risotto and fruit-based desserts.
